Kryptonite: highly refined

We may have been aware of the joys of Kryptonite for a few years now but we wanted to make it perfect. And now, finally, after many toils and more than one steam cloud of sinus-clearing peppermint fog later... It. Is. ON.

We were first instructed to make Kryptonite back in 2011, precisely 3 years ago in fact, for the wedding of two of Management's favourite folk (he was their best man!) and we've struggled to recreate the minty fudgy candy bit since then: the recipe was a bit of a free-for-all, the details of which were not particularly well recorded. We're fairly sure there was caster sugar and glucose syrup involved. Anyway. There definitely is a recipe now and, adapting our long-favoured Clementine recipe to swap out the orangey components for minty ones, we have finalised the formula for this new bad boy.

Fresh and clean, the peppermint oil in the batter has a most striking zing, whilst the peppermint fudge crumble adds fascinating texture and further little nuggets of concentrated mintiness.
